Is there a way to turn off the Last Issued To field in Item Statistics so that you don’t see the patron’s name?

There is no way for the system to stop retaining the Last Issued To patron field entirely. 

If your library does not want this information to display, make sure the worker has the CIRCULATION_DESK_PRIVACY or STUDENT_WORKER_RESTRICTED role. These two lack the permission that displays the Last Issued To patron name.

Note:
In your Service Configuration under WMS Circulation > Admin/General > History, if you change the Item Statistics: Last Issued To setting to "Never retain", the Last Issued To field in WorldShare Circulation does not retain the patron name.
